DOCG – “Domain Origin Control Guaranteed” means it’s guaranteed to be from the very best grapes in the very best area (Valdobbiadene) with the best soil conditions.  

Our prosecco is supplied by the Salatin family business in Veneto where maintaining the best quality is critical to their ethos.

Here is the key information that you need to know about our fabulous Salatin Prosecco

Our Prosecco is available in cases of six. You can order cases for delivery to the UK mainland with free delivery, apart from the Scottish Highlands where there is a charge for delivery.  We can also deliver to the Isle of Wight and the Isle of Scilly. There is a delivery charge for these two locations which will  be calculated before you pay.

Growing area – Hilly region located between Conegliano and Valdobbiadene
Grapes – Glera
Soil – Land with morain origins, deep, clay – rich, heavy
Training system – Guyot
Harvest period -Second and third September week
Vinification – Cold and quick maceration followed by soft pressing
First fermentation – At a controlled temperature with selected yeast
Second fermentation – Charmat method, slow re-fermentation for at least 45 days at a low controlled temperature
Alcohol  – 11% Vol
Sugar residue – 14,5 – 16 g/l
Total acidity – 5,70 – 6,70 g/l
Appearance – Yellow with greenish highlights
Perlage – Fine and persistent
Bouquet – Deeply elegant to the nose, and immediately an intense explosion of apple, peach and rose aromas
Palate – To the mouth it is soft, full of body, fruity and intense
Serving suggestion – Goes best from the beginning of a meal to the end with fish based dishes, poultry and as an aperitif at any time of the day
Serving temperature – 6 – 8 °C

A lovely wine, this!  Pale lemon-green hue with fine, continuous bubbles and a tight cordown at the rim. The bouquet is delicate with white peach, ripe yellow plum, a floral overlay and gentle fresh bread nuance showing some time on the lees during second fermentation in tank. Barely off-dry, soft and creamy on the palate, light body but intensity of flavour and fresh acidity to balance fruit, crackling mousse texture across the palate, lingering floral finish. Elegant wine, whether as an aperitif with caviar, an accompaniment to fish in a creamy white sauce or lobster with butter or with a goats’ cheese savoury.

One of my favourite “Bubblies”. We try to keep a case in our cellar, but the wine is so “more-ish” that it’s hard not to drink it!
